Production

The winery is located not far from the direct harvesting points and all the equipment is custom-made using the next generation technologies.

Winery Lefkadia

The process of wine production starts with the acceptance of grapes delivered directly from vineyards. Then berries are cooled down to 4-8 C in special cool chambers. This technology helps guarantee a better future wine clarification and a proper extraction of flavouring and colouring substances. Before wine pressing bunches of grapes pass through two table separators where rotten berries are hand separated.

Then the berries are cut in a shredder and go to hydraulic presses with soft and gentle pressing which let getting the maximum from the berries – 62% of juice.

The very structure of the winery organized according to the gravity principle is unique: grape pass to each next stage without using pumps. In the basements there are metallic and oak reservoirs where wines develop and ripe. A space saving filling line completely excludes the contact between the finished product and the environment.

The ageing process is completely under control of the wine-makers team. The research is conducted by Lefkadia lab specialists; the most advanced one in the North-Caucasian area, whose work is in-demand not only in Krasnodar Region and in Russia but in Europe as well.

Laboratory complex

Laboratory of Lefkadia is contribute to the future of the Russian winemaking.

Here they make physico-chemical and microbiological analyzes of grapes, grape must, wine, soil, vines and leaves, as well as testing and packaging tubes. In addition to the classical methods of analysis and measurements are used capillary electrophoresis, spectrophotometry, atomic absorption, chromatographic and physico-chemical methods.

Production laboratory is certified by the State Regional Center for Standardization, Metrology and Testing in the Krasnodar region, and the accuracy of the results is confirmed by the monthly participation in the international program of laboratory quality control BIPEA.

The laboratory is equipped with all the necessary measuring equipment of the latest generation, chemical reagents and reference documentation, and data processing and analysis is conducted on high performance computers using advanced software.
Specific requirements for the staff — there are only specialists with higher education and extensive experience in analytical biochemistry.
